    Gold round shallot

These have a higher sugar content than that of an onion which means they caramelise beautifully. They are best enjoyed roasted whole with their skins left on. Once cooked, they then pop out of their skins and are simply sweet and delicious.

    Gold elongated shallot

With tight coppery brown skins and a crisp white flesh, these are great for frying, grilling or eating raw in salads.

    Red shallot

These visually stunning dark red shallots have uniform tear-drop shape and nice white flesh. They are extremely versatile offering a rich subtle onion taste.

    Gold Echalion/Banana shallot

Also known as banana shallots these are popular with chefs. They have crisp white flesh with a pink tinge and single centres making them ideal for slicing into rings and lightly sautéing.

  • Image
    Yellow Flat Cipollini

These sweet flat onions with thin skin and translucent white flesh have more residual sugar than the average yellow or white onion. This makes them fantastic for roasting or caramelising. They are also great for pickling as they leave behind none of the astringent raw onion flavour.

    Red Flat Cipollini

With a small flat disc shape and a ruby copper-toned thin parchment skin, these have a pale, translucent purple flesh. They are similar in flavour to the yellow cipollini, having a firm texture and semi-sweet, though pungent, flavour in its raw state. These are ideal for grilling and roasting.

TASMANIA

THE CLEAN GREEN STATE

Tasmania is an isolated island state off Australia’s south coast. It is known for its vast, rugged wilderness areas and is largely protected with parks
and reserves.

AIR PURITY

Home of the purest air on the planet, Tasmania’s winds are cleaned and purified through the glacial southern oceans for over 16,000 kilometres. These winds remain uncontaminated from pollution as they pass no land, cities or factories. More than a quarter of Tasmania’s land area is committed to agriculture, with dairy products, meat, vegetables and fruit highly valued in key markets.

CLIMATE AND WEATHER ADVANTAGE

Tasmania has a temperate maritime climate, cooled by prevailing westerly winds off the Southern Ocean, providing regular rainfall and conditions that are free from extremes in temperature. Tasmania’s temperate climate and longer growing season make it the perfect place to produce our high quality shallots known for their keeping properties and beautiful sweet and mild flavour.

FREEDOM OF DISEASE

As an island, Tasmania has a clear biosecurity advantage. Tasmania’s quarantine system is at the very core of the Tasmanian brand. Its natural environmental values and quality produce rely upon the state’s freedom from pests, weeds and diseases. This status provides access to a number of international markets, including Asia, where stringent import regulations are in place.
